Noodle Kugel

Sometimes, you need a bit of mom's cooking. It's cold and snowy and I need something substantial, sweetish rather than savory, and the menu begs for some noodle kugel. If you're never had a densely sweet noodle kugel, this is a simple dish that, when served with a salad, makes a substantial dinner guaranteed to put a smile on your family's faces. Yes, this is a high cholesterol, high calorie entree. But after shoveling a foot of snow, it's just what the body needs to replenish.

Ingredients:

1 16 oz package wide egg noodles
4 eggs, well beaten
3 tablespoons orange marmalade
1 8-oz carton cottage cheese
1 16-oz carton sour cream
1/4 cup cinnamon sugar
1 cup golden raisins
1/2 salted butter

Preheat oven to 350 degrees. In a large pot, boil noodles and then drain well. Return to the pot, add the butter and coat the noodles well. Set aside. In a large mixing bowl, beat eggs, add remaining ingredients and stir well. Add buttered noodles and coat them well until fully blended. Put in a lightly greased (with butter) 9x15" glass baking dish for one hour. Top will ge a lovely golden brown.

Serve with a large tossed salad for a sweet and savory meal.
