
My oldest daughter is at an age where I can pretty much let her go to town in the kitchen. Especially as far as baking goes. Her specialty is cheesecake.
This morning, before it got too hot in the house, (This has been a wildly hot summer, so far!) my daughter baked a batch of Oatmeal Coconut Cookies for us to munch on.
Ingredients:
1 1/2 c. Old-fashioned rolled oats
1 3/4 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 c. butter
1/2 c. applesauce
1/2 c. brown sugar
1/2 c. white sugar
1 egg
1 tsp. vanilla
1/2 c. flaked coconut
1. Preheat oven to 375 degrees.
2. In a medium bowl, combine rolled oats, flour, baking powder & soda.
3. In a large bowl, cream together butter & sugars. Beat until fluffy. Beat in egg. Stir in applesauce, vanilla and coconut.
4. Add dry ingredients to wet ingredients. Mix until well blended.
5. Shape into 2-inch balls. Arrange on baking sheet and slightly flatten.
6. Bake in oven 8-10 minutes, until golden brown.
Makes about 2 dozen cookies.
Don't forget the milk!
