Oatmeal Cookies with Hemp Flour

I know, these cookies look way too healthy, and I guess they are. But, they taste so good! (Who knew healthy could taste so great???)

I took my standard Oatmeal Cookie Recipe and swapped in some changes based on some ingredients that were hanging around in my cupboards: Hemp Flour, applesauce and flaked coconut.

This is what I came up with. What is interesting is that these cookie taste even better after a few days.

....and no, the hemp won't give you a buzz or anything :)

Oatmeal Hemp Cookies

1 1/2 c. old-fashioned rolled oats
1 c. hemp flour
1 1/4 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1 c. applesauce (in place of the butter)
1/2 c. white sugar
3/4 c. brown sugar
1 egg, beaten
1 tsp. vanilla
1/2 c. flaked coconut

Directions:

1. Preheat oven to 375 degrees.
2. In a bowl, combine oats, flours, baking powder, baking soda,.
3. Mix together applesauce and sugars.Beat in egg, mix in vanilla and coconut.
4. Combine wet and dry ingredients.
5. Spoon about 1- 1 1/2 inch balls onto greased baking sheet about 2 inches apart. Flatten slightly with the bottom of a mug, or something similiar.
6. Bake for 10-12 minutes, or until just barely golden.You will have to look hard as these cookies are dark to begin with.

This recipe makes 3-4 dozen, depending on how big you make the cookies.
