Oh So Moist Sweet Potatoes Biscuit

I was watching FoodNetwork one day and Paula Deen was on. She mentioned sweet potatoes biscuits and my ears started ringing. They just sounded so good to me. Unfortunately, for some reason I can't remember now I missed the portion when she made it. But I knew I could just visit Food TV website and the recipe would be there so I wasn't worried. After printing the recipe last week, I've made it 2 nights in a row. It is THAT good. I told my husband they're perfect for Thanksgiving wherein he suggested I make bigger ones. So yes, that's 1 dish for Thanksgiving dinner :) .

I did some changes in the recipe though. It called for rolling the dough and cutting it with biscuit cutter. I decided to just scoop it as is into muffin cups. Also note that I changed the butter on the top step. I don't think it ruined the recipe at all coz both times I made this the biscuits turned out moist and delicious.

Recipe from FoodTV website

1 1/4 cups all-purpose flour
2 heaping tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup mashed cooked sweet potatoes
1/4 cup (1/2 stick) softened butter
2 to 4 tablespoons milk (depending on the moisture of the potatoes)

Preheat the oven to 450 degrees F.

Sift together flour, sugar, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.)

Like I said above, I didn't roll the dough. After mixing it I just scooped spoonful amount onto muffin pans and baked in the oven. Also, I baked 'em for 10 minutes, took them out to top each biscuit with a thin slice of butter, then put it back in the oven for another 5 minutes.

This is very easy to make and I'm looking forward to our Thanksgiving this year coz I will surely make these in bigger versions :) .
