One Pot Cooking: Creamy, Cheesy Tuna Casserole

I like when I cook a dish that doesn't leave every pot and bowl in my house dirty. I'm also the type that washes dishes as I finish up with them, instead of leaving all of the dish washing until the end of my cooking spree.

That's why casseroles are so appealing to me. Barely any dishes are used in the prep, and the baking dish goes from the oven to the table. Leaving very few dishes for me to wash. Tuna casserole is a one pot meal that will leave you with just a few dishes to scrub clean.

I remember eating tuna casserole regularly as a kid, and I still like it. What's not to like about tuna casserole?

I sometimes use pasta as the carb, this time I used basmati rice. It tastes good no matter what grain or pasta you use. The recipe below is my doubled version. Freeze the leftovers for another meal, if you like.

Tuna Casserole

Ingredients

8 c. cooked whole wheat basmati rice
2 c. tuna packed in water
2 c. cream of mushroom soup
3 c. frozen mixed vegetables
4 c. cheddar or monterey jack cheese
1 c. bread crumbs
2 T. butter

Directions

1. Preheat over to 350 degrees. Lightly grease a 9 x 13 baking pan.
2. Spread 6 cups of the cooked rice into the baking pan.
3. Spread the cream of mushroom soup over the top of the rice.
4. Spread the tuna onto the top of the soup.
5. Spread half of the cheese over the top of the soup.
6. Spread the mixed vegetables onto the top of the cheese.
7. Spread the remaining 2 cups of rice over the mixed vegetables.
8. Spread the remaining cheese over the top of the rice.
9. Mix together the bread crumbs and butter. Spread over the top of the cheese.
10. Bake covered for 30 minutes, and then bake uncovered for 20 minutes, until cheese is
bubbly.
