One Pot Meal: Bacon & Bok Choy Chow Mein

Happy Chinese New Year! It’s the year of the pig, which sounds fairly rude, but I’m sure it’s a good thing for those born in the year of the pig. There’s no need to think that this is the year that you can have two extra pieces of cake at every birthday party or that you can get away with chowing down on chips and dip every other night. Nope, it’s not that kind of year of the pig at all…

…Which brings me to bacon. Bacon is the kind of ingredient that can transform a recipe from ho-hum to yum-yum. (Poet, I am not…) I have added bacon to roast chicken, baked snapper, quiche, salads, and soups, all with amazing outcomes. I think one could add bacon to dirt and have a positive result. (Moment to ponder...) Okay, well, being that I won’t be trying that experiment anytime soon we can just assume that bacon does indeed have a terrific boldness of flavor that enhances a lot of dishes.

The neat thing about bacon is that it can be added to something really healthy, like bok choy, and you would never know you were eating something that good for you! Bok Choy is cabbage-like vegetable chock full of healthiness. You can find it in the Asian produce section of your local grocery store.

To prepare the bok choy: Run a sink half full of water, sprinkle in a bit of salt. Cut off the base of the bok choy stalks, leaving lots of stalk and the upper leaves. Place all of the bok choy in the water and swish it around. Rinse thoroughly and drain in a colander. Grabbing handfuls of bok choy, chop into ¼ - ½ inch pieces, leaves and stalks, chop it all up. Your bok choy is now ready for action!

Bacon & Bok Choy Chow Mein (Serves 2-4 depending if it’s a meal or a side dish.)

150 g/5 oz. uncooked chow mein noodles (Or pasta - spaghettini, linguine, etc.)
5 slices of bacon, chopped into ½ inch pieces
4 cups of bok choy, chopped into ½ inch pieces
¼ c. oyster sauce (Common ingredient found in your grocery store’s Asian Foods aisle.)
½ tsp. garlic, minced (Add more if you like garlic.)
2 eggs

1. Cook noodles.
2. In a large pot, start cooking the bacon. Add the bok choy and continue cooking until the stalk of the bok choy become translucent and the bacon is finished cooking.
3. Add the cooked noodles, oyster sauce and garlic to the same pot. Stir completely.
4. Make a well in the noodle mixture, crack the eggs into the well, stirring slowly as the eggs start to cook. Once eggs have started cooking, stir the eggs into the noodle mixture completely. Stir again as needed to ensure eggs are cooked thoroughly.

If you like a little zip, add some hot sauce, otherwise - Enjoy!
