OPA! The Original Greek Salad...

Greek food is one of my favourite types of food. There is something so delicious about feta cheese in salads and melted with spinach, as in Spanokopita. I love how the Greeks use spices like oregano, dill and rosemary. I also love how they decided to panfry cheese (Saganaki). Yummy hard cheese like Kefalotyri fried in butter and then drizzled with lemon juice...I think I would have been pretty hard pressed to think of frying my cheese...but then again, maybe after a few bottles of Retsina...

Here's how I make my Greek Salad - and this is as authentic as it comes. I got the recipe from a little old Greek lady one year at a Greek Festival. She was cute. She gave me the recipe and then started dancing to some Bouzouki Greek music - with a guy 20 years younger than her! Geez, the Greeks sure know how to have fun!

3 Tomatoes, chopped in large chunks
1 Cucumber (preferably English), sliced & cut in half moons
1/2 c. sliced red onion
1/2 c. Kalamata olives
3/4 c. Feta Cheese (Goat Cheese), crumbled
1 tsp. Oregano
1 T. Red Wine Vinegar
1/4 c. Olive oil

1. Pour the olive oil into a glass measuring cup. Add the red wine vinegar. Whisk with a fork.
2. Pour the oil & vinegar mixture over all of the other salad ingredients. Toss and serve.

Greek Salad is a meal by itself. Just add a baguette and a bottle of dry white wine...

    Tried The OPA Greek Salad, & It was delicious, even though I put a bit too much Red Wine Vinegar(by misteak)next time will read the recipe more carefully. But Great . We love Greek Salad and this was one of thee best recipes we have tried yet!
