

INGREDIENTS
3 orange roughy fillets
flour for drenching
salt and pepper
butter for pan-frying
Lemon Sauce
reserved 2 tbsp flour
1/2 cup of water
1/2 of lemon
salt and pepper
basil leaves for garnish
Drench the fillets with flour. Both sides. Pan fry each in a pan with melted butter. Set the fried fillets aside. Sprinkles the reserved 2 tbsp flour, on the same pan. Use a whisk to mix the flour, a little bit of butter and the bits from frying. Add water, keep whisking, squeeze the lemon and whisk until the sauce is thick.
Pour the lemon sauce on top of the pan fried orange roughy fish. Garnish with basil leaves.
