Pancake Day (Shrove Tuesday): 'Breakfast for Supper'

I told myself that I wasn't going to celebrate Pancake Day. But, who can resist Pancake Day? So I have a slight carb hangover tomorrow, c'est la vie!

Shrove Tuesday otherwise known as Pancake Day is today - is there a better excuse for eating pancakes in the middle of the week? Pancake Day is the day before Lent. Lent is the basically 40 days of fasting before Easter. I don't know anyone personally who will be fasting for 40 days. These days people might give up one food, say like, chocolate - well, that likely wouldn't last too long! Maybe a person could give up red wine for 40 days - could you? It actually doesn't have to be food that is given up. You could give up being grouchy or give up being impatient.

Not being particularly religious, I won't be giving up anything...no, wait, I think I'll give up exercising for 40 days. Geez, I'm gonna miss that...

Okay, back to my story...so before Lent people would need to rid their houses of all of their rich and fat foods for the beginning of Lent. Often this included food items such as flour, eggs, milk and bacon grease - ta-da! The makings for pancakes! Thus, Shrove Tuesday became known as Pancake Day.

Works for me! ‘Breakfast for supper’ is the norm in my household at least one night a week. It’s good to have foods like eggs, bacon, sausage, hashbrowns, bagels, and English muffins around for those weeknights that you’re just too rushed to go into recipe mode. Just go into breakfast mode!

Fairly Fluffy Pancakes

4 T. Butter
2 c. Flour (White or Whole Wheat)
2 T. Sugar
4 tsp. Baking Powder
1 tsp. Salt
2 eggs
2 c. Milk

1. Melt Butter
2. Combine flour, sugar, baking powder, and salt.
3. Beat together melted butter, milk and eggs.
4. Stir wet ingredients into dry ingredient until just combined. It’s okay to have a few lumps.
5. If you’re not using a non-stick pan, then brush pan with some oil. To test if the pan is hot, flick some water on the hot pan. If it sizzles then you're ready for pancaking. Pour ¼ c. of batter per pancake, cook until bubbles break. Then flip over. Please don't push on your pancakes with the flipper - they don't like that...

Banana Variation: Add 2 ripe bananas to the batter and change the 2 c. of Flour to
1 1/4c. White flour, ¼ c. Cornmeal, ½ c. Whole wheat flour…

Pancakes are really like an empty canvas just waiting to be filled. By adding chocolate chips, blueberries, oatmeal, or flax you can up the taste factor a few notches. Check your cupboards, maybe you can invent a new and delicious flavoured pancake. Let me know what you like to put in (or on) your pancakes...
