Passover Macaroons

What would Passover be without macaroons? Yes, you can buy the canned ones, but...yuck! They have no taste and very little texture. Macaroons are easy to make. How easy? Here are not one, but three recipes for you to try. And I must say, the chocolate ones...to die for!


Macaroons Recipe

2 large egg whites
Pinch of salt
2/3 cup sugar
1 teaspoon almond extract
8 oz. finely ground blanched almonds or hazelnuts (about 2 cups)
About 30 whole almonds or hazelnuts (optional)

Instructions for the Macaroons recipe:


Makes about 30 cookies.

Variations of the above Macaroon recipe:

Add 1 tablespoon grated orange or tangerine zest.

Chocolate Macaroons recipe:

Add 6 ounces melted (but not hot) semi-sweet chocolate and 1/2 teaspoon grated orange rind and 1 1/2 teaspoons orange juice.

Coconut Macaroons recipe:

Substitute 1 1/3 cups (3 1/2 oz. or 103.51 milliliters) grated coconut for the nuts.

Note: If you are grinding the nuts in a food processor, then add a little sugar to keep them from turning greasy.
