Peach Cobbler

Last weekend my husband suggested we stop at one of the Farmer's market near our place for some fresh fruits and veggies. He was thinking of watermelon while I thought about peaches. I can't mention this favorite fruit of mine without thinking about making peach cobbler.

Thanks to my mother-in-law for sharing with me her cobbler recipe. I have been making this for years and it is always a hit in my family.

For Topping :
2 cups of flour
1 cup sugar
2 tsp baking powder
1 tsp salt
8 oz(2 sticks) butter
1/2 cup hot water

Mix the first 5 ingredients together with hands 'till they're into a small pieces. Add water and stir with a spoon.

For Fruit Filling:
3 cups of sliced peaches(peeled and cored)
1 cup sugar
1 tb lemon juice
1/2 cup water
2 tb conrstarch

Put fruit, sugar, and lemon juice in a pan. Bring to a boil. Mix cornstarch wiht water and add to the fruits. Gently stirring in the process. Cook for 30 seconds.
Transfer the fruit into a greased baking pan. Using a spoon, drop topping over it.

Bake 'till it's brown in 350F. Put foil-covered cookie sheet under coz it drips while cooking.

Serve with one scoop of vanilla ice cream if you like. We forgot to grab some at the grocery store. We couldn't wait to bite into our slices so we decided to forego on the ice cream. Hey it was still good. Besides, it was probably a better choice, health wise :) .

    i made this, it was ok but the topping-peach ratio was too low. You need to put more peaches or less topping in. tastes ok, a little bland tho.
