I’m always on the lookout for new salad ideas -- I’ve never been a fan of the iceberg and boxed crouton variety. Here’s a new salad we tried over the weekend. I intended to make a pear and pecan salad because that's what I had on hand – my mom, who even more than me doesn’t want to see food go to waste, suggested adding the cranberries I had left over from the cranberry and orange cheese spread.
I loved these flavors together and will definitely make this again. The cranberries added a perfect zing of flavor, plus a burst of color. I didn’t have goat cheese but if you do it would be a great addition. The dressing recipe is adapted from the Joy of Cooking. I had dressing left over and repeated the same salad for lunch the next day with apples in place of pears – also very good.
Pear and cranberry salad with honey buttermilk dressing
Salad
Toss together:
1 large pear, thinly sliced
¼ cup dried cranberries
4 bowls of mixed salad greens
¼ cup toasted pecans
Dressing
1 minced scallion
3 tablespoons honey
1/4 cup buttermilk
1/4 cup sour cream
1/4 cup white wine vinegar
ground black pepper
1/4 tsp. salt
1/2 cup olive oil
Mix all ingredients except olive oil. Slowly stream in oil while whisking vigorously. Keep whisking until all ingredients blend nicely. Top salad to taste.
