Pear and cranberry salad with honey buttermilk dressing

Pear + Pecan Salad I’m always on the lookout for new salad ideas -- I’ve never been a fan of the iceberg and boxed crouton variety. Here’s a new salad we tried over the weekend. I intended to make a pear and pecan salad because that's what I had on hand – my mom, who even more than me doesn’t want to see food go to waste, suggested adding the cranberries I had left over from the cranberry and orange cheese spread.

I loved these flavors together and will definitely make this again. The cranberries added a perfect zing of flavor, plus a burst of color. I didn’t have goat cheese but if you do it would be a great addition. The dressing recipe is adapted from the Joy of Cooking. I had dressing left over and repeated the same salad for lunch the next day with apples in place of pears – also very good.

Pear and cranberry salad with honey buttermilk dressing

Salad
Toss together:
1 large pear, thinly sliced
¼ cup dried cranberries
4 bowls of mixed salad greens
¼ cup toasted pecans


Dressing

1 minced scallion
3 tablespoons honey
1/4 cup buttermilk
1/4 cup sour cream
1/4 cup white wine vinegar
ground black pepper
1/4 tsp. salt
1/2 cup olive oil

Mix all ingredients except olive oil. Slowly stream in oil while whisking vigorously. Keep whisking until all ingredients blend nicely. Top salad to taste.

    The cranberries add color and taste as well as healthy antioxidants. They are helpful in combating kidney problems and gum disease also.
