

INGREDIENTS:
1 package of penne pasta, cooked, al dente'
3 boneless chicken breasts, cubed
3 medium sized zuchinnis
1 can of mushroom soup
salt and pepper for seasonings
shredded cheddar cheese
Cook the penne according to the box. Drain the water off. Set aside.
Sautee cubed chicken in olive oil. Once cooked, add the slices of zuchinni. I sliced them in rounds. Season with salt and pepper. Cook only for a minute or so. You want to retain the zuchinni's shape and crunchiness.
Combine the chicken and zuchinni mixture with the cooked penne. Stir in 1 can of mushroom soup. Pour everything in a casserole dish(lasagna pan). Distribute evenly on the pan. Sprinkle shredded cheese on top. As much as you want. The cheesier the better :) . Cover with a foil, stick it the oven, 365F. Bake for about 10 minutes. Perfect with your choice of wine.
