Pizza That Gets Freaky In the Oven (Best of 2007)

Pizza is something that we eat alot of at my house. If we aren't whipping up a name brand rising crust type of pizza, then we're making our own. I've tried so many pizza doughs that I can tell just by looking at the recipe what texture the dough's going to be - Hey, everyone needs a talent!

The thing I like about pizza is that it can be adjusted to please anyone. (Just ask my fellow blogger Dexie's son!) (He likes macaroni and cheese on his pizza - sorry, bud, I just can't go there...but he can, he's only eight!) Aaaaaaaaah, to be eight is to be able to eat anything - no guilt and no conscience where food is concerned...anyway, pizza is one of my favourite foods.

With homemade pizza you can make your own dough or buy a ready made crust. You should have a few of the latter on had in case you're in a mealtime jam. But, if you have the time to let the dough rise...make it from scratch...it's so...so...Italy!

But, alas, it wasn't Italy in my kitchen tonight...it was somewhere between Italy and Saskatchewan, so I made my halfway Italian pizza with Freaky Crust Pizza Dough. This dough uses only the very basic ingredients, puts on a weird show in the oven and doesn't taste too bad, considering...

Freaky Crust Pizza Dough
1 c. whole wheat flour
1 tsp. salt
1 tsp. dried oregano
2 eggs lightly beaten
2/3 c. milk
* I usually double this recipe and use an 11x18 baking sheet

1. Preheat oven to 400 degrees F. Lightly grease a rimmed pizza pan or baking sheet.
2. Stir together the first three ingredients. Mix in eggs and milk. Stir well. Pour batter into pan. It's going to seem runny. That's okay. Tilt the pan so that it's evenly coated.
3. Bake in oven for about 15-20 minutes. This is the freaky part - it grows and puffs up!
4. When it's set, take it out of the oven and put on pizza sauce, toppings and cheese. Bake in the oven for an additional 10-15 minutes until the cheese is melted. Broil for a few minutes if you like that browned cheese look.

Trust me, this is the strangest pizza dough. But, once you put on some onions, mushrooms, pepperoni, and cheese, you won't care. Afterall, pizza is pizza, who cares if it looked like revenge of the monster dough in the oven?
