
I call this "plain" because I usually add chocolate chips in my banana bread but not last Thursday night. My pantry ran out of chocolate chips supply and I didn't go to the grocery store until the next day. Nevertheless, the bread was delicious.
My husband stayed a little bit longer at work so he didn't get home 'till almost 6pm. By that time my son and I were famished. We always eat dinner as a family so we had to wait for him. Unless he's running really late, in that case I let my son eat first and I just wait for the hubster. Anyhooo, we couldn't fight the temptation to cut into that warm banana bread cooling off on the rack anymore so I cut us each a slice and slitthered butter on top. Just as we were shovelling it in our mouths, respectively, Daddy showed up. He saw the banana bread on the cutting board and before he could even give me a kiss, he went straight to the bread and cut himself a slice. I wasn't sure if I should take that as an insult or a compliment, HAHA. I'll take the latter :).

INGREDIENTS:
1 cup sugar
1 stick of butter, room temperature
2 eggs
3 ripe bananas, mashed
1 tsp milk
1 tsp ground cinnamon
1 tsp nutmeg
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
Preheat the oven to 325 degrees. Grease a loaf pan with butter generously. Dust it with a sprinkle of flour.
Cream butter and sugar in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
In a small bowl mash the bananas with a fork. Stir in the milk, nutmeg, and cinnamon.
In another bowl, mix together the flour, baking powder, baking soda, and salt.
Add the bananas mixture to the creamed mixture and Mix until combined. Add dry ingredients, mixing until flour disappears.
Pour batter into prepared pan and bake 1 hour to 10 minutes, or until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto a rack and cool completely before slicing.
Optional: Fold in chocolate chips into the mixture before pouring into the loaf pan. It's really good, trust me. Like I said, I ran out of it that's why I made a plain banana bread.
