Pork and Beans, with Pork Actually In It

Is it just me or are you also frustrated digging into a bowl of pork and beans, yet there's is no pork in it? There may be a couple of bits in there but that's about it. My husband said, it's in the flavor. See, a porker(someone who loves to eat pork) like me is not satisfied with that answer. When something said "pork", I expect to find chunks of pork in the dish. Not bits and pieces, but darn it, chunks of it.

So with that in mind, I needed my reliable crockpot to help me in making my own pork and beans with chunks of pork in the soup. The taste is not as sweet as the ones you get from a canned pork and beans since the flavor of the soup will come from the beans itself and some seasonings. It's really easy.

Wash and drain red beans thoroughly. Dump 'em in the crock pot, add sliced chunks of pork, then add 3 cups of water, then add the seasonings : salt, pepper, dried basil, and garlic powder. Just eyeball the measurements. Cover your crockpot. Set it in high. Leave it to simmer/cook for hours. You can check and stir once in a while. So while you're doing other house chores, your dinner is cooking in your kitchen. The smell would surely lift your spirits up. Ladle chunks of pork along with the beans in bowls and VOILA! Pork and Beans with Pork in it :)
