Potato Kugel is a Jewish Holiday Standby

Potato kugel. It's not just for Passover. My son absolutely loves potato kugel. I could make it every single night and he would devour it. Funny thing is, he doesn't like potatos! He won't eat potatos in stews or as a side dish. He would rather die than eat mashed potatos. But give him this potato kugel, and life is good.

MOM'S POTATO KUGEL

* 6 lrg grated raw potatoes, drained
* 1/4 cup matzo meal
* 1 lrg. onion, grated
* 1 tsp. salt
* 2 lrg. carrots
* 1/4 to 1/2 tsp. pepper
* 2 eggs, beaten
* 4 tbsp chicken fat (or oil)

Grate potatoes, onions and carrots. Add eggs and dry ingredients and only 2 tbsp. fat. Mix well. Pour into greased baking dish (fills 2 8"X8"). Pour melted fat on top. Bake at 375 1 to 1.5 hours till top is crisp and brown.

Um, so it's a bit heavy. And probably can clog your arteries in a single bite. It tastes great! Just ask my son.
