Pound Cake that Calls for Only Three Eggs!

Yes, I know, usually Pound Cake asks for a zillion eggs, but don't worry, you only need 3 eggs for this recipe.

And that's not all...this recipe is so fantastic and light that you might not believe it's pound cake. You'll know it's the real deal, though, when you don't chew it fully and the cake gets lodged in your throat like a glob of glue. Remember, chew your food!

Ingredients

2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 butter, softened
1 c. sugar
3 eggs
1 tsp. vanilla
1 c. sour cream

1. Preheat oven to 350 degrees. Lightly grease a 9"x5" loaf pan.
2. Combine flour, baking powder, and salt. Set aside.
3. Cream butter and sugar until fluffy. Add eggs. Stir in vanilla.
4. Fold in flour mixture alternately with sour cream.
5. Spoon batter into prepared pan. Bake on the middle rack of the oven for about 45 minutes, or until a toothpick comes out clean.
6. Cool in pan on a wire rack for 10 minutes. Remove from pan to cool completely.

Pound Cake tastes great by itself, but it really tastes best in combination with something else. For example, Pound Cake with red rasperry sauce and whipped cream. Or try this simple glaze:

Lemon Glaze

1. In a small pan, heat the juice of an orange with 1/4 c. of sugar. Heat just enough to dissolve the sugar.
2. Pour sauce over warm Pound Cake.
