Quaker Vanishing Oatmeal Cookies

We're on a bakathon here at Casa Margalit in preparation for Blogathon. I'm participating for my second year raising money for Children's Hospital in Boston. That's 24 hours of blogging every 30 minutes. Yes, I am insane. Thanks for noticing.

So far this morning I've got dough rising for 2 challahs, a coffee cake in the oven, and now my daughter is baking her famous, recipe right off the carton, oatmeal cookies. We've tried many recipes. None are as good as these. I swear it, these are the best darn oatmeal raisin cookies in the world. And my kid makes them for me. I'm so lucky!

Ingredients:

1/2 pound margarine or butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins

Directions:
Heat oven to 350 F. In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.
