Quick and easy pizza

It's the last night before Passover and we're just about ready to change over the kitchen, so tonight in our family is traditionally pizza night. Usually I make my own dough, but my bread machine bit the dust a couple of weeks ago, and so I bought some prepared dough. Boy, it's cheap! And easy to use as well.

I rolled out the dough and added dried basil and oregano to the dough to flavor it a bit. I find that if you pass the rolling pin over the dough after the herbs are added, they stick to the dough very well.

I tend to make large pots of marinara sauce, which I then divide into smaller portions in glad freezer containers, and then freeze. They defrost easily and quite quickly in the microwave, in just about the time it takes to roll out the dough. Then I add the sauce to the pizza dough.

After the sauce is spread out, I top the pizza with skim milk shredded mozzerella and sprinkle a bit of parmesian on top. The more cheese the better in our family. My kids won't eat anything on pizza but mushrooms, and we were out, so plain cheese it was.

Bake at 450 degrees F for about 10-12 minutes. Take out of oven, slice while hot, and serve.

Total time: 30 minutes for a nice hot meal. Serve with a tossed green salad.
