
Pronounced keen-wah, quinoa was referred to as the 'Mother of all grains' by the Incas. It's an unusual grain in that it's protein content is quite high - 12-18% compared to other grains. It is gluten-free and considered easy to digest, making it a friendly food for the table of those with Celiac Disease.
Quinoa can be found in health food stores. Typically to cook it up you want to add one cup of water to each 1/3 cup of quinoa. It can be used as a substitute for most grain recipes, including stuffing for your turkey, a base for salads, and as a side dish with your favourite ingredients added to it.
