

INGREDIENTS:
6 medium size red potatoes, unpeeled
2 boiled eggs, chopped finely
3 spoonfuls of mayonnaise
1 jar of green olives, drained
salt and pepper to taste
Boil the whole potatoes. Once fork tender, drain the water and store in the fridge for an hour or so. Chop them in quarters after the chilling process. Put in a bowl. Add the chopped boiled eggs, mayonnaise, green olives and seasonings. Don't put too much salt coz the green olives are salty enough for the salad. Gently stir everything together with a spatula. Cover the bowl then store in the fridge until ready to serve.
Perfect with grilled meats and vegetables. Definitely a must have for the warm weather. Whenever that comes down my yonder. :).
