Roasted Bananas with Brown Sugar and Walnut Glaze

Again, looking through my cooking archives brought this recipe to light after years of being hidden on my recipe hard drive. Since we had all the ingredients and it looked easy to make, I tried it. VERY sweet. Kids liked it a lot. I'm not a huge fan of the cooked banana, although I love bananas when they are perfectly yellow with not a brown spot on them. But since we had 4 bananas that were past that state, I decided to give this a go, and I'm glad I did. It's a good 'company' dessert. Showy and different, but still not difficult to make.

Roasted Bananas with Brown Sugar and Walnut Glaze

Yield: 6 servings

* 1/3 cup packed brown sugar
* 1/4 cup fresh lemon juice
* 2 tablespoons reduced-calorie margarine, melted
* 1/4 teaspoon ground cinnamon
* 4 large bananas (about 1- 1/2 pounds)
* Cooking spray
* 1/4 cup chopped walnuts, toasted
* 1 1/2 cups vanilla low- fat frozen yogurt

1. Preheat oven to 450 degrees F.

2. Combine first 4 ingredients in a bowl, and set aside.

3. Cut bananas in half lengthwise. Place banana halves, cut sides up, on a jelly-roll pan coated with cooking spray. Bake at 450 degrees F for 4 minutes.

4. Drizzle sugar mixture evenly over banana halves, and sprinkle with toasted walnuts. Bake an additional 3 minutes.

5. Cut each banana piece into thirds crosswise. Serve bananas with frozen yogurt; drizzle with any remaining sugar mixture.

Serving size: 4 banana pieces and 1/4 cup frozen yogurt
