Salmon Made Easy and Simple!

Salmon is a really healthy delicious fish choice. Whenever, I see fresh salmon (not farm raised) I buy a few pound to freeze. I simply store it in individual freezer bags. This recipe is so simple, I just had to share it! This salmon is truely unique, it is the salt that pulls the fishy taste!

Just a quick overview on buying fresh salmon:
Ask when the fish arrived, a couple of days ago is ideal.
Look closely at the color, a deep orange almost red is the best!
The veins of the fish should not appear large - white fatty large veins is a sign of farm raised.
The best salmon? Upon visual inspection you can hardly see any veins at all!

Total preparation time is 25 minutes.

Salmon fillets with skin on one side
2" of kosher salt
Lemon slices ( cut the lemons into thin rounds, then slice halfway thru and twist - looks great)
Any type of sauce you prefer. I simple pour a bit of melted butter on the top.

Heat a saute pan with 2" of kosher salt until slightly smoking.
Place the salmon in the pan, skin side down and cover.
Approximately, 8 minutes (more depending on how many fillets you are cooking)
Top it with the melted butter and lemon.

Delicious!
