Side Dish in a Box : Couscous

Couscous was traditionally made from the hard part of the hard wheat Triticum durum, the part of the grain that resisted the grinding of the relatively primitive millstone. The name is also used for prepared dishes made from other grains, such as barley, millet, sorghum, rice, or maize. Couscous is traditionally served under a meat or vegetable stew.

In the United States couscous is known as a type of pasta, probably reflecting the influence of Sicilian immigrants. However in most other countries it is treated more like a grain in its own right. It is particularly valued for its rapid preparation time.

In French-speaking countries in sub-Saharan Africa, fufu is often called cous-cous. From Wikipedia

couscous_1.jpgThe first time my son tried couscous which was sometime last year he asked what they were and I replied with, "they're small pastas". I knew the mention of the word pasta would suffice. Coz not only does he love Macaroni & Cheese and Pizza, he also loves pasta dishes. The kid could eat carbs everyday but not gain as much weight as I want him to. I wish I have his metabolism :). Anyway, back to the couscous, we love the Near East brand. The Commissary had 20 cents off coupons so my husband and I grabbed 3 boxes last week. We decided on 3 different variations: Parmesan, Roasted Garlic and Olive Oil and Toasted Pine Nuts.

couscous_2.jpg. It's easy to cook. The box pretty much outlines every steps for you. In 5 minutes you're done. I made the Toasted Pine Nuts as one of the side dishes(sauteed spinach for the veggie side) to the Pork Roast(Lechon) this past Saturday night.
