Simple Ways To Prepare Fresh Corn

One of the things I love most about Summer is the promise of fresh corn from the produce section. Don't get me wrong, I do use the canned versions but nothing beats the fresh kind. My favorite ways of preparing fresh corn are boiling and sauteeing fresh kernels in a generous amount of butter with sprinkle of salt and pepper.

How to boil corn?
Fill a huge pot with water. Don't over fill of course. Once boiled, slowly add the corn in the cobs, cover and boil again for another 8-10 minutes. That's it. Don't over boil coz a corn is better if it's a little crunchy. Don't forget to spread butter while it's warm. If you have some time you can also make a favorite topping that I learned from Rachael Ray years ago. All you have to do is mix a cup of grated parmesa cheese, salt and pepper, a pinch of garlic powder and a pinch of red pepper flakes. The last ingredient will depend on how much kick you want in your corn. Just sprinkle as much as you want on your buttered corn in the cob and Enjoy.

My second favorite way which I just recently discovered from Ina Garten of Barefoot Contessa from Food Network. is by sauteeing the fresh kernels in butter, then seasoning them with salt and pepper. You can do this with canned corn of course but the taste of fresh sauteed corn is unmistakably better.

Truth be told, I actually enjoy running my knife through the cob. I also like popping uncooked fresh kernels in my mouth. It's really good, try it sometime :)

Corn is a perfect accompaniment to any meat dishes. We usually have any of these with chicken.
