Slump

This recipe is from Blackbird's blog. She posted it quite some time ago, and I meant to copy it down and then forgot all about it. I found it after she posted a link to it, and I've got all the ingredients to make it for dessert tomorrow. We'll have roasted salmon, fresh zucchini, a sourdough loaf I'll make in the morning, and this Slump for dessert. To me, it sounds absolutely fabulous. I'll let you know how it turns out.

4 cups of blueberries (or a combo of rasp/black/google)
1 cup of sugar
1 cup of flour
1 1/2 tsp baking powder
pinch of salt
2 Tbs. butter
3/4 cup milk
1/2 tsp vanilla
vanilla ice cream

Blackbird says, "don't make a big deal of this recipe".

  1. Butter a 7 - 8 cup baking dish, toss the berries with 3/4 cup of the sugar and turn into the dish.
  2. Using a fork toss together the flour, baking powder, salt and 1/4 cup of the sugar.
  3. Heat milk and butter on low - pour over the dry ingredients and stir.
  4. The batter will be thick. Lay it upon the berries.
  5. Bake at 375 until the top is golden brown (but make sure it is cooked through with a toothpick)
  6. Let cool for 5 minutes and serve by the spoonful with some ice cream on the side.
