Souvlaki for the Greek in You

Aaaaaah...when the sun gets hot and there's no breeze, who wants to cook? Nobody. But someone needs to do the deed. Start up the BBQ and toss on some Souvlakis for you and whoever else is around...

Plan ahead to marinate the meat (turkey, chicken, pork or lamb is best) overnight or for 2-3 hours. Typically you want a tender meat.

Ingredients:

2 pounds of your choice of meat, cut into 1 inch cubes
1/2 c. olive oil
1 c. red wine
1 tsp. oregano
1 clove garlic, minced

1. Place meat in a large bowl. Add all of the other ingredients. Stir until well coated. Cover, and refrigerate for a few hours or overnight.

2. Preheat grill. Lightly oil grill.

3. Thread meat onto skewers. If the skewers are wooden, soak them in water first for at least 20 minutes.

4. Grill 10 minutes, turning often. Grill until cooked through.

Serve these delicious skewers with pita bread, tzatiki sauce and Greek Salad. Maybe some Ouzo to wash it all down...
