Spicy Red Pepper Veggie Chili

When the air was cool today I knew it was a day for some chili - Spicy Red Pepper Veggie Chili - one of my favourite recipes, okay, all of my recipes are my favourites, but this one is really amazing.

It's got a nice combination of fresh ingredients - red pepper, green pepper, fresh jalapeno, onions, garlic (There ain't a virus within a 50km radius that'll live on you after you've had this brew...) The spice combination is one of the most fascinating I've ever used all in one recipe - chili powder, cumin, oregano, coriander, allspice, and cloves. Really, this chili is just loaded with goodness for your bod.

It cooks up fast, freezes great and has a taste that makes your tastebuds explode. Try it and let me know what you think...

Spicy Red Pepper Veggie Chili

olive oil
onion
3 garlic cloves, minced
5 tsp. chili powder
1 T. brown sugar
1 T. cumin
1 T. oregano
1/2 tsp. coriander
1/8 tsp. cloves
1 jalapeno pepper
2 1/2 c. water
1 c. green pepper
2 c. red pepper
1 can tomato paste (about 3-4 T.)
1 can (16 oz.) of mixed beans or kidney beans
1 can (28 oz.) diced tomatoes
1/2 c. bulgur (optional, but makes the chili. Bulgur is wheat cracked wheat. You should be able to find it with the rice or maybe even with the hot cereals in your grocery store. You could sub in couscous, althought bulgur has a better texture for this recipe.)
Garnish with grated cheddar cheese and/or sour cream

1. Heat oil in large pot. Add onion & garlic.
2. Add the next 7 ingredients.
3. Add the water.
4. Add the jalapeno, red & green peppers.
5. Add the beans, paste & tomatoes.
6. Add the bulgur.
7. Bring to a simmer and cook for about 20 minutes.
