Spinach & Garlic Quiche: Perfect for a Light Lunch!

Do you ever have a hard time deciding the menu when you're having guests over? Well, one of my favourite dishes to serve for a brunch or lunch is quiche. It's easy to make and always turns out delicious.

Try serving it along with a spring lettuce mix, citrus and avocado salad, or a Caesar salad because greens are a perfect match for the texture of quiche. I've made many quiches, but this is a goody. Plus with all of the folate in the spinach and immunity building properties in the garlic, you can't go wrong!

Spinach & Garlic Quiche1 - 9 inch unbaked pie crust
1 T. olive oil
1/4 c. onions, chopped fine
2 pkgs (10oz/275 g size) frozen chopped spinach, thawed & squeezed very dry OR use 2-3 cups of slightly steamed kale
1 container (10oz/475 g size) ricotta cheese
2 cloves of garlic, minced
1/2 c. sundried tomatoes in oil, drained & chopped
2 eggs, beaten
1/4 c. grated Parmesan cheese
1/4 tsp. salt & pepper

1. Preheat over to 350 degrees.
2. Warm oil in small pan and cook onion until soft.
3. In a medium bowl combine spinach, ricotta, onions, garlic, sun dried tomatoes, eggs, half the Parmesan, salt and pepper. Mix thoroughly.
4. Pour into the pie crust.
5. Sprinkle top with the remaining Parmesan.
6. Bake for 30 minutes, or until cooked through.
7. Remove from oven. Let sit for at least 10 minutes before slicing.
