Sweet Potato and Red Lentil Curry

This is one of those recipes that amazes me every time I prepare it. It's so easy, so healthy and heck, it even tastes good! It's one of those dishes that tastes even better the next day and you can freeze it, if need be.

I love to serving this curry with warm, buttered pita bread. Add hot sauce if you need to pull an Emeril.

Ingredients:

1 T. olive oil
1 onion, diced
2 tsp. garlic, minced
1 T. curry powder
3 uncooked, peeled sweet potaotes, cut into 1" pieces
1 c. uncooked red lentils, rinsed
1/2 c. long grain rice
1 c. vegetables: green beans, peas or carrots (You pick - go crazy!)
1/2 tsp. salt
1 1/2 c. chicken or vegetable broth
2 1/4 c. water
fresh cilantro for garnish

1. Heat oil in a dutch oven. Add onion. Cook for several minutes.
2. Add garlic and curry powder. Cook for several more minutes.
3. Stir in sweet potatoes, lentils, rice, salt, broth, and water. Heat to boiling.
4. Reduce heat to low. Add veggies during the last 15 minutes of cooking. Cover and simmer for 30 minutes, or until lentils and rice are tender.
5. Take off heat. Let stand 10 minutes.
6. Garnish with cilantro.
