Thanksgiving Side Dish: Wild Rice with Cranberries

Need to take a side dish to Thanksgiving Dinner? Try this wild rice combination, you’ll be surprised at how awesome the cranberries taste (and look!) with the wild rice.

Wild rice is bizarre. It looks like dried pieces of little twigs and is hard nails. But once it’s cooked with liquid, the stick-like needles soften and burst right out of the dark brown/black casings. And the texture is a nice change. Wild rice has a slightly chewy, hardy sort of texture to it.

Wild Rice with Cranberries

Ingredients

3 c. chicken stock
1 c. wild rice
3 T. olive oil
1 red onion, diced
1 tsp. sugar
1/2 tsp. dried thyme
1/2 c. dried cranberries

Directions

1.Bring stock to a boil, add wild rice. Cover pot & reduce heat to low. Cook for 45 minutes, or until rice is softened. (Wild rice should remain slightly chewy. The rice should absorb all of the stock.)

2. Saute onion in olive oil, until translucent. Add thyme and sugar. Continue to cook until onion is caramelized. (It will begin to turn brown.)

3. Add cranberries to the onion mixture. Cook for 5 minutes. Combine the wild rice with the onion mixture.
