The Winter Squash Files: Red Kuri

Aaah, fall - the season of winter squash. Ya gotta love'em. Ranging in colour from caramel to warm orange to dark green and in between. They are glorious just to admire, and the variety of tastes and textures are worth exploring.

Take the Red Kuri squash, beautiful orange on the outside - orange on the inside too. This squash has the texture of potato. It's meatier than most of the other squashes as it has less water content. Less water content makes the taste that much more rich.

Squash can be served as a side dish, or thrown in a stew, mixed with mashed potatoes, or sometimes I even use it in my baking.

I like to buy my squash and let it sit on the counter for a week or so, just so I can admire it for awhile. Then I eventually cook with it.
