Three Ingredients: Bean & Feta Pasta Salad

Yes, you can have a complete meal just by combining beans, feta and pasta. If you don't have feta you can sub in another kind of cheese - aged cheddar, havarti, jack...a cheese with taste...

Feta is my absolute favourite cheese. It's so versatile. It tastes amazing by itself, in a salad, cold, warm (ever try Saganaki? Pan fried feta cheese - yum!) and, of course, feta tastes great with pasta.

Toss together cooked pasta, a rinsed can of kidney or romano beans and feta cheese, and you have yourself a quick and healthy lunch.

Try adding a handful of dried cranberries and a sprinkling of olive oil for a flavour jolt.

    Saganaki is made with Kefalotiri cheese.

    Lesli said: Thanks for commenting, Kim. You're right about the type of cheese! I guess I've only ever used feta at home for Saganaki 'cause that's as close as I can find in my local grocery store. Thanks for the info & recipe, I'm going to post it for forks.ca foodies.
