
A few weeks ago, I was delighted to find champagne grapes in my local grocery store.
The champagne grape is a grape that can be traced back to ancient Greece. The grapes are only pea-sized, or smaller! They are tasty and seedless. They are completely edible, but also look amazing as a garnish.
Spinach salad is an easy salad to throw together, all you need is spinach and a fruit. Nuts like sliced almonds or walnuts go along well with a spinach salad. Toss it all together with this rather amazing vinaigrette...
Ingredients:
1 1/4 c. raspberry jam, seedless
1/4 c. olive oil
1 c. seasoned rice vinegar
1. Place ingredients in a jar and shake until well combined.
2. Store leftover vinaigrette in the refrigerator.
