Warm Up the Crockpot: Lentil Sloppy Joes

It's been a chilly fall, so I've started making soups and reaching for my crockpot early this year.

There are few things in life as comforting as a big bowl of warm, healthy soup on a cold day. My favourite Lentil Soup recipe has stood the test of time and still is one of the soups I make most often.

Lentils are a staple in my kitchen. I buy an 8lb. bag on a regular basis. They're easy to cook with, can be used in so many ways, and pretty much explode with nutrients.

Lentils help to lower cholesterol. The fiber in lentils helps to keep your blood sugar from rising too fast after a meal. Among other nutrients, 1 cup of lentils provides you with 30% of your daily requirement of protein. And they're high in iron (folate).

Obviously, if you haven't developed a taste for lentils, you better get on it!

Combining Lentils and the crockpot was inevitable. So, when I came across this recipe in The Best Family Slow Cooker Recipes by Donna-Marie Pye. I had to try it.

Lentil Sloppy Joes

Ingredients

1 c. dried, red lentils (rinsed)
2 c. water
1 1/2 c. celery, finely chopped
1 1/2 c. carrots, finely chopped
1 large onion, finely chopped
3/4 c. ketchup
2 T. worcestershire sauce
2 T. br. sugar
2 T. cider vinegar
8 whole wheat buns
1/2 c. grated cheddar cheese

Directions

1. In a pot, bring water and lentils to a boil. Cover and simmer for 10 minutes.
2. Add the next 7 ingredients. Mix well.
3. Cover and cook on low for 10-12 hours, or high for 4-6 hours.
4. Serve on halved whole wheat buns. Sprinkle with cheddar cheese.
