Watermelon Agua Fresca

We're having a heat wave. A tropical heatwave. The temperature's rising, it isn't surprising...but it's too darn hot to eat! And when it's too hot to think about food, what do you want. Nice cooling drinks. Drinks made with icy cold fruit are always refreshing when it's hot enough to fry an egg on your car hood. This is a Mexican drink served on very warm evenings. It works for me!

Watermelon Agua Fresca

Ingredients:

• 2 cups cubed and de-seeded chilled watermelon
  
• 1/2 cup chilled water
  
• 1 1/2 tbsp sugar (adjust according to the sweetness of watermelon)
  
• 1-2 tbsp lemon juice
  
• mint leaves for garnish (optional)
  

Blend the above ingredients for 8-10 secs. If you want a smooth drink, strain. Garnish with mint leaves and serve chilled. Serves 4.
