Watermelon Cake: Happy Birthday to Me!

One of my fondest childhood memories was the excitment of the night before my birthday. I would go to bed and while I lay there trying to sleep I would listen to my mom creating my 'cake' in the kitchen. My favourite cake required no baking.

My mom would take a watermelon, lay it on it's side and cut the top off of it. From there she would melon ball the entire contents out of the watermelon shell, leaving a watermelon bowl. (Sometimes, she would cut the watermelon edge in a jagged pattern.) She would place the melon balls back into the 'bowl' of the watermelon along with a variety of in season and tropical fruits: apricots, nectarines, cherries, grapes, cantaloupe, honeydew, pineapple, mango, kiwi, strawberries and then garnish with starfruit and mint. Mom would stick a thick candle in the 'cake' and have it ready for me on my birthday morning.

Last week when my birthday was drawing near, I told my kids about the great cake granny (my mom) used to make. They were quite excited and the next time they saw granny they asked her to make me a watermelon cake for my birthday. Although she hadn't made one in years, my mom agreed. She outdid herself and created a watermelon masterpiece. We enjoyed the fresh fruit of my birthday 'cake' for several days. The kids couldn't get enough of it and I was transported back to my childhood days. I loved it. I can't wait until next year!

My girlfriend told me the other day that she would rather have a watermelon on her birthday instead of a cake. She loves fruit!!! I am SOOO making this for her. It's ganna be awesome.
