

Having a crock-pot helps a lot during the weekend when all you want to do is be a couch potato, relax, and enjoy a movie or 2 with the family. Of course we still have to worry about dinner. Thank goodness for a crock-pot, you can accomplish both. How about a classic beef roast this weekend?
Season the roast with salt and pepper and Italian seasonings on both side. Heat up a non-stick pan with a little bit of olive oil. Sear each side about 2-3 minutes.
Transfer the roast onto the crock-pot, add 1 1/2 cup of water. Close the lid, set it in LOW or HIGH and enjoy your weekend with the family. 2 hours before dinner time, add peeled whole potatoes on the pot. Once the potatoes are softly-tender, take them out. Put them in a bowl and set aside. Add a few peeled carrots. Once cooked, add the potatoes back, scooping some of the juices to pour over the veggies. VOILA!
While you're enjoying a lazy day, your dinner is already cooking. Tender beef roast with perfecly cooked side veggies. What else could you ask for? :)
