
We all have those days when there just isn't time to cook a 'from scratch' meal. Those evenings late at the office, or being stuck forever in traffic, and your kids are hungry and need to eat a nice nutritious meal as quickly as possible.
For those of you lucky enough to live by a Trader Joe's grocery store, you're probably familiar with their cooking sauces. They're easy to use, make preparing a meal quick and delicious, and are inexpensive. With cooking sauces, a couple of side dishes, and the main course, you can have a complete meal cooked in about 20 minutes that is actually good enough to serve to company.
Last night was one of those nights in my family. By the time we got home from the movies (we saw the new Pirates) everyone was ravenious. And nothing was defrosted or planned. Gulp.
I pulled out some frozen chicken thighs, and browned them in some EVOO. Opened a jar of Trader Joe's Mojito cooking sauce, poured it over the browned thighs, and let them cooked covered while I made the sides.
Rice is always easy. I made Basmati rice in a pot. Two cups of water, one cup of rice, a pinch of salt, bring to a boil and then simmer on low.
Then I opened two cans of Trader Joe's Cuban Style black beans. Cut up an onion into a medium dice, and then diced a red and yellow pepper. Sauted the onion and peppers in a shallow pan until onion was translucent, then added the black beans and a generous splash of white vinegar. Keep heating on medium-low heat until rice is done.
Serve with rice on one side of plate, beans on other side of plate, and chicken on top. Cover rice with Mojito sauce. It's delicious!
