Whip Up Some Pumpkin Tarts for Thanksgiving Dinner!

Pumpkin tarts are awesome. Try putting a whole tart in your mouth. Yum! Or maybe you’re more of a two-bite tart eater? Whatever your pleasure, whip up some pumpkin tarts before going over to your in-laws for dinner and you’ll end up with a few extra brownie points. It might even get you out of doing the dishes…!

Pumpkin Tarts

Ingredients
2 eggs
14 oz. can of pumpkin
1 c. packed brown sugar
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ginger
1/4 tsp. salt
3/4 c. evaporated skim milk
16, 3-inch tart shells

Directions

1. Preheat oven to 350 degrees.
2. Lightly beat eggs in a bowl. Add pumpkin, spices and salt. Combine.
3. Mix in milk.
4. Place about 2 T. into each tart shell.
5. Bake for about 25 minutes. Check for doneness by inserting a knife into the centre of a tart. It should come out clean.
6. When serving, place a dollop of whipped cream on each tart. (Leave a few plain, for those that prefer not to indulge in whipped cream.) (I’ll have two dollops…)
