Who is tired of cooking in this heat?

I'm so tired of my hot kitchen. Even with the air conditioning blasting, all I want to eat is sherbert, sorbet, and yogurt. It's just too darn hot for cooking. But cook I must. We cannot survive on peanut butter and jelly sandwiches forever. My opinion is, if it's too hot to keep the stove on for long, then make fish. It cooks quickly, it always tastes great, and it's easy.

ROAST SALMON WITH THAI COCONUT SAUCE

INGREDIENTS

Sauce:


Fish

DIRECTIONS


  1. To prepare the sauce, in a small bowl, combine all the ingredients, reserving 2 Tbsp. of the cilantro and mix well.
  2. Cut the salmon into 4 8 oz. fillets .
  3. Preheat oven to 300 degrees F.
  4. Line a baking sheet with aluminum foil.
  5. Place the salmon on the prepared baking sheet, making sure that the pieces do not touch.
  6. Place in the oven and bake for 18 - 20 minutes, until the fish just begins to flake with slight pressure from a fork.
  7. Stir the sauce to dissolve any cornstarch that may have settled to the bottom and pour into a saucepan.
  8. Bring to a fast boil for 30 seconds.
  9. Taste and adjust the seasoning if necessary.
  10. Transfer the salmon to warmed dinner plates and spoon the sauce over.
  11. Garnish with the reserved cilantro and serve at once, accompanied by the lime wedges.
