
Last weekend me and a few girlfriends escaped the city for the peace and fresh air of the mountains.
We wanted to get back to nature and eat like those mountain people eat - you know the type - hikers, skiers, rock climbers (People we are not!) Anyways our assumption is that they eat good hearty food, so we planned our menu with that thought in mind. It made for some great eats. One of the most delicious meals we had was breakfast. I can thank my sis-in-law for suggesting yogurt and toppings as the meal that started our mornings.
My sis-in-law advised me to strain plain yogurt for about 2 days (in the fridge). Actually she said to strain French Vanilla, but I opted for plain. After straining, you are left with very thick yogurt - sort of a sour cream thickness. This is what you use as a base and then you can add pumpkins seed, blueberries, flaxseed and honey and anything else that you have on hand.
This is what the Greeks do with their yogurt - they're so smart! This strained yogurt can also serve as the base for the Greek cucumber dip tzatziki.
Directions:
1. Line a strainer with good quality paper towel.
2. Place strainer over a bowl. Position the bowl to catch the liquid that leaves the yogurt.
3. Pour the yogurt into the strainer onto the paper towel.
4. Let sit in the fridge for at least 24 hours, but 48 hours is best.
5. Once it is strained, it's ready to eat!
6. Add berries, nuts, flax, wheatgerm, brans buds, liquid honey, pumpkin seed, etc.
Whether you're in the mountains or not, this yogurt makes for a fantastic breakfast or snack!
